Citrus Oolong Menu Development Guide

Build a citrus oolong menu from one controlled tea concentrate, then test lemon, grapefruit, berry and sparkling variations one at a time in the same 500 ml cup format.

Direct answer: Start with a floral or light-aroma oolong concentrate, keep the tea and final cup weight constant, and change only one citrus or fruit system per test.

Four controlled 500 ml pilot formulas

DrinkStarting formula
Lemon oolong220 g tea concentrate + 30 g fresh lemon + 25 g syrup + ice to 500 ml.
Grapefruit oolong200 g tea concentrate + 45 g grapefruit preparation + 20 g syrup + 80 g water + ice.
Berry citrus oolong190 g tea concentrate + 35 g berry puree + 15 g lemon + 20 g syrup + ice.
Sparkling citrus oolong150 g tea concentrate + 120 g sparkling water + 25 g citrus + 15 g syrup + ice.

Run the first comparison

  1. Use the same tea batch, water, brew standard and 500 ml finished weight.
  2. Record fruit weight, syrup, ice and final yield.
  3. Score aroma, acidity, sweetness, bitterness, finish and appearance at 0 and 15 minutes.
  4. Change one variable at a time before repeating the top formula.

Claim-safe menu language

Use names such as lemon oolong, grapefruit oolong, berry citrus oolong and sparkling oolong. Do not claim detox, fat burning, immunity support, caffeine-free status or a fixed caffeine value without finished-product evidence.
